Ingredients:


Half chickens
1 liter of water
oil for frying
3 tablespoons oil, for sauteing

Seasonings for mashed:


8 red onions
5 cloves of garlic
1 tsp pepper granules
1 tbsp coriander, roasted
3 cm turmeric
5 pieces of hazelnut
1 tablespoon salt

3 cm galangal, crushed
3 cm ginger, crushed
2 stalks lemongrass, crushed
4 sheets of orange leaves
1 tsp sugar

complement:


75 grams of dried glass noodles, pour boiling hot water, drained
100 grams bean sprouts
100 grams of toasted coconut shavings, finely crushed
1 leek, thinly sliced
3 tablespoons fried shallots
2 tbsp fried garlic

How to Make:


Boil chicken in boiling water. Lift, fry chicken until browned. Shredded-shredded meat, set aside.
Saute ground spices with other seasonings until cooked. Pick up, put in the chicken broth. Cook over low heat until boiling. Lift.
Set Soun, bean sprouts, and shredded chicken in a bowl. Sprinkle with toasted coconut, scallions, fried shallots, and garlic fries. Flush with soto. Serve in hot conditions.
